We’ve been crafting Barossa rosé for over 10 years now. We love it because epitomises the fresh new wave of lighter styles of wines now emerging from the legendary Barossa Old Vines. Back in 2019 we decided to experiment and keep aside our best parcel of old vine Grenache and Mourvèdre from an amazing vineyard in the Lyndoch foothills to produce something a little more opulent... and the rest as they say is history. The 2025 vintage is our first in two years as we only make this wine in the very best Grenache years. Think bright cherries & berry aromas; strawberry, peaches & cream with a hint of savoury spice on the palate; and an indulgent creaminess to finish. Wild fermented, with a short 6 month stint in gorgeous French oak barrels; this wine is the definition of lush and the perfect addition to your Christmas table - pair with hot or cold smoked salmon with creme fraiche & chives; honey glazed ham or cranberry & pistachio stuffed turkey. Unfined, unfiltered and vegan friendly. Only 493 dozen made.

In early Spring, Huon, Dan & Theo tasted through the 2025 Grenache batches, barrel by barrel, and there was a complete agreement on the 2025 vintage wines being absolutely spectacular across the board! The Schild Vineyard batch that goes to Pax Aeterna was a shining highlight again with the now 93 year old vines delivering a wine of bright-fruited intensity and concentrated lip-smacking flavour.
